The perfect condiment to serve with curries!
6 | ripe mangos, peeled and chopped into small cubes |
4 tbsps. | brown sugar |
4 tbsps. | white wine vinegar |
2 | garlic cloves, crushed |
1/2 thumb sized piece | ginger, peeled and grated |
1 | red onion, finely diced |
salt and pepper, to taste |
1. Combine all ingredients in a medium pan on a low-medium heat, mix well, cover and leave to cook for 30 minutes. Stirring occasionally.
For a smooth chutney blend with a hand blender once cooked.
