This is a traditional Japanese side dish with plenty of tang

Ingredients

1 cucumber
1 red chilli, stalk removed
2 tsps sesame seeds
150 ml rice vinegar
1/2 white onion, sliced
3 tsps salt
2 tsps sugar

Method

  1. Place the cucumber and onion in a large mixing bowl and cover evenly with salt. Now, leave for 10 minutes.
  2. Press the vegetables to press out any excess water and strain.
  3. Now, add the rest of ingredients to the vegetables, mix and then leave for 1 hour then serve.

Chef’s tips

If you can find it, add a little dried seaweed for an extra authentic umami flavour.
