It’s been a pleasure to hear about your donations, and we’re very grateful to everyone who has contributed in their local area this year. Donors are at the forefront of the fight against food poverty, helping organizations like Bounceback in our mission. A big thank you to everyone who donated!

Our chef’s colourful sweetcorn panzanella is a feast for the eyes! Check out the recipe below.
Ingredients
2 slices | Bread, either stale or lightly toasted |
10 | cherry tomatoes, halved |
80g | sweetcorn |
6 | olives, pitted |
1 tsp | red onion or shallot, finely diced |
a handful | basil leaves, finely chopped |
a squeeze | lemon juice |
2 tbsp | olive oil |
to taste | salt and pepper |
Method
1. Combine all the ingredients in a mixing bowl and toss for a couple of minutes to ensure that the olive oil, lemon juice, salt and pepper evenly covers the ingredients. In particular make sure the bread has absorbed the oil and lemon juice.
