These pancakes are a delicious way to use up a ripe banana for a healthy breakfast. Naturally sweet, crisp on the outside and fluffy on the inside, these tasty pancakes are great served with maple syrup and berries.
1 | large banana, mashed |
2 | eggs |
150ml | milk of your choice |
175g | oats |
1/2 tsp | baking powder |
1 tsp | cinnamon |
1 tsp | vanilla extract |
1 tbsp | butter |
1. Combine all the ingredients together in a blender and blend until smooth. Don’t worry if you don’t have a blender – simply mix all the ingredients together (the oats will create a rougher texture without being blended).
2. Heat up the butter in a pan on a high heat for 1 minute.
3. Turn the heat down to medium and place a ladle of mixture in the pan in a circular shape. Cook for 2 mins on one side and flip using a thin spatula then cook for 1 more minute on the other side.
4. Serve with toppings of choice.
These pancakes can be made naturally sweeter by simply adding maple syrup or honey to the mixture. They can be served with anything from berries, chocolate chips, yoghurt, granola or nutella.
