The black onion seeds add a delicious, authentic flavour to these naan breads, which are perfect with curries as an alternative to rice.

Ingredients

175g plain flour or strong white flour
175g greek style yoghurt or natural yoghurt
1 tsp baking powder
1/4 tsp salt
2 tsps black onion seeds (optional)

Method

  1. Preheat a grill to medium high heat and line a grill pan with baking paper.
  2. In a medium sized bowl, mix together the flour, baking powder, salt, and black onion seeds until evenly distributed.
  3. Add the yoghurt, and stir to incorporate, then use your hands to bring all the ingredients together into a dough.
  4. Lightly dust your work surface and rolling pin with flour. Divide the dough into 4 equal pieces, and roll each one out into an oval about 2-3mm thick.
  5. Place the naan breads onto the grill pan and put under the grill. Make sure they are not too close to the grill – they will puff up as they cook, so keep a close eye on them.
  6. When they have puffed up and lightly browned, around 4-5 minutes, flip them over. Grill for a further 4-5 minutes until the other side is lightly browned.

Chef’s tips

Black onion seeds are also known as Nigella seeds, and can be found in the spice section in most supermarkets. If you don’t have a grill, cook the naan breads in a griddle pan over high heat for 1-2 minutes per side, or bake for 10 minutes at 180°C, flipping halfway through.
