This is a simple and tasty egg mayo recipe that’s perfect for sandwiches!
8 | eggs |
6 tbsps | mayonnaise |
1 tsp | dijon mustard |
3 | spring onions, finely chopped |
1/4 tsp | paprika |
salt and pepper, to taste |
1. Place eggs in a saucepan and cover with cold water. Bring water to the boil, then simmer gently on a low heat for 10-12 minutes.
2. Remove eggs from the pan and place into a bowl of cold water.
3. Once cool, peel and chop the eggs into small chunks.
4. Place the chopped eggs into a bowl and stir in the mayonnaise, mustard, spring onions and paprika.
5. Add salt and pepper to taste, and stir again.
Add some chopped celery for an extra crunch! We used Dijon, but you can also use English mustard. Serve on soft white bread for a delicious egg mayo sandwich.
