This dish showcases pak choi and demonstrates how it can become a perfect Eat Well for Less side dish!

Ingredients

250g pak choi (halved or quartered depending on size)
1 red onion, chopped
2 thumb size pieces of ginger, peeled and grated
3 garlic cloves, thinly sliced
3 tbsps light soy sauce
1 lime, juice
2 tbsps sunflower/vegetable oil

Method

  1. Pour the oil into a pan and get to a high temperature.
  2. Carefully place the pak choi into the pan, cut-side down. Cook without stirring for  approx. 30 seconds until they take on a light brown colour but remain crisp – set aside on a plate when cooked
  3. Add more oil to the pan, then add the onion and ginger – cook for approx. 2-3 minutes before adding the garlic.
  4. Add the pak choi back into the pan. Cover with a lid and let the greens steam for 60 seconds. Take off the lid, remove the pan from the heat and add the lime juice and soy sauce.
  5. Stir, then serve and enjoy!
