Roast Potatoes

Sunday lunch potatoes

A must have on any Sunday lunch, roast potatoes up there with everyones home cooked favourites.

Ingredients

1kg potatoes, peeled, chopped into thick chunks
1l boiling water
salt, to taste
1 tbsp butter

Method

1. Preheat the oven to 200°C/180°C fan/ gas mark 6.

2. Take a large pan, fill with the potatoes and enough water to cover. Bring to the boil, then season with a little salt and leave to cook for 10 minutes or until par boiled.

3. Strain the potatoes in a colander. Once the water has run clear, carefully shake the potatoes around in the colander until a light fluffy texture has appeared around the outside of the potatoes.

4. Using half of the butter, line a baking tray and arrange the potatoes on them, cook these in the oven for 20 minutes moving around the tray after 10 minutes to ensure an even cook.

5. Add the remaining butter and any further seasoning to the tray, mix evenly across the potatoes. Cook for a further 10 minutes then serve.

Chef’s tips

A clove of garlic and some rosemary are also a welcome addition to the cooking process. Just throw them in the tray with the potatoes for a little extra flavour.
