Overnight oats are the perfect stress free quick filling breakfast that’s all prepared the night before. This recipe may sound slightly interesting, but if you love carrot cake this is definitely worth a try!
50g | oats |
1 tbsp | chia seeds, optional |
30g | carrot, grated |
10g | raisins |
3 | walnuts, chopped |
150ml | milk |
1. The night/day before you want the overnight oats, add the oats, chia seeds, 2/3 of the carrot, cinnamon and milk into a bowl and mix well.
2. Store in an airtight container or in a bowl overnight in the fridge.
3. The morning after, top the overnight oats with the leftover grated carrot, raisins and walnuts before enjoying.
Overnight oats are great to meal prep and are perfect on warmer summer mornings or when you have an early start
For an extra creamy taste, try adding 1tbsp of natural Greek yoghurt, or if you prefer your oats sweeter add a drizzle of honey!
Try doubling/tripling the recipe to make a whole batch setting you up for a busy week ahead!
