Avocado Salad

Quick and easy Mediterranean salad that is nutritious and tasty.

A perfect dish for the summer!

Ingredients

medium avocado, cubed
300g  cherry tomatoes, halved
medium cucumber, cubed
100g  feta cheese, cubed
2 tbsps Pomegranate seeds
1 tbsp  red wine vinegar
2 tsps fresh lemon juice
1 tsp ground cumin
handful of fresh parsley, finely chopped
Salt and black pepper to taste

Method

1. Combine all the ingredients into a bowl and mix well. 


2. Add salt and pepper to taste.

3. Enjoy!

Chef’s tips

 You may use firm tofu instead of feta cheese if you would like to make it vegan friendly. Additionally, if you want to add some carbs to the salad, couscous would be a perfect choice!
