A perfect dish for the summer!
1 | medium avocado, cubed |
300g | cherry tomatoes, halved |
1 | medium cucumber, cubed |
100g | feta cheese, cubed |
2 tbsps | Pomegranate seeds |
1 tbsp | red wine vinegar |
2 tsps | fresh lemon juice |
1 tsp | ground cumin |
handful of fresh parsley, finely chopped | |
Salt and black pepper to taste |
1. Combine all the ingredients into a bowl and mix well.
2. Add salt and pepper to taste.
3. Enjoy!
You may use firm tofu instead of feta cheese if you would like to make it vegan friendly. Additionally, if you want to add some carbs to the salad, couscous would be a perfect choice!
