A cucumber and yoghurt side dish...

This is a perfect little Polish side dish. It’s refreshing and light and a great alternative for Tzatziki lovers.

Ingredients

1 large cucumber
3 tbsps sour cream or Greek yoghurt
1 spring onion, finely sliced
dill, finely chopped, handful
1 lemon, juice and zest
salt, to taste

Method

  1. Peel the entire cucumber then slice into thin disks, place these into a large mixing bowl and discard the skin.
  2. Add the dill and spring onions to the bowl.
  3. Next add the lemon, salt and yoghurt. Mix together until the ingredients are evenly covered with yoghurt then serve.

Chef’s tips

Feel free to add more lemon for a sharper taste.
