Spicy Indian Masala Baked Beans on Toast

A tasty quick dish enjoyed by many who want a twist on the classic beans on toast.

Ingredients

1 tablespoon olive oil

1/4 tsp mustard seeds

1/2 tsp cumin seeds

1/2 chopped onion

1 clove garlic sliced or crushed

3/4 tsp chilli powder

1/4 tsp turmeric

1/2 tsp coriander powder

One tin of baked beans

2 pieces toast

50g grated cheese (optional)

 

Method

1. Heat oil in a sauce pan, add mustard seeds as oil heats, mustard seeds will start to pop.

2. Add cumin seeds, when they sizzle add the chopped onions and sliced garlic.

3. Let onion cook for two mins then add spices followed by baked beans. (if you don’t want it too spicy leave out the chilli powder or add less eg 1/4 tsp).

4. Let spices and beans fuse for a few minutes.

5. Toast bread to personal taste.

6. On your toasted bread add the beans, & grated cheese.

7. Place under a hot grill until the cheese has melted to your preference.

Chef’s tips

Enjoy as it is or with a little leaf salad.  For extra protein enjoy with a fried egg on top or fried mushrooms.
