Secret vegetable pasta sauce

A tomato pasta sauce with hidden veggies for the little ones

You can make any pasta sauce a secret way to sneak healthy veggies in. As long as you keep tomato as the main flavour you can blend in whatever seasonal veg you have.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 medium courgette, grated
  • 1 butternut squash, grated
  • 1 can chopped tomatoes
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt 
  • 1 tablespoon tomato paste 
  • 1 tablespoon sugar 
  • Pasta of your choice (for serving)

Method

  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onion is soft and translucent.
  2.  Stir in the grated carrot, courgette, and butternut squash. Cook for another 5-7 minutes, until the veggies are softened.
  3. Add the tinned tomatoes, basil, salt, tomato paste, and sugar. Stir well to combine.
  4. Bring the sauce to a gentle simmer. Lower the heat and let it cook for about 20-25 minutes, stirring occasionally. 
  5. Blend until smooth and thick and serve with your pasta of choice.

Chef’s tips

Add cheese on top and serve with garlic bread!
