A tasty fresh dish that consist of toasted bread and tomatoes, bruschetta works well as both a quick fix and a summer brunch.

garlic clove, peeled |
1 | garlic clove, crushed |
150g |
tomatoes, diced |
1 tbsp |
olive oil |
1 tbsp |
vinegar |
salt and pepper to taste |

1. Place the bread in a toaster and toast.
2. Once the bread is toasted, scrape the peeled garlic back and forth across the bread until the garlic has worn down.
3. Mix the tomatoes and crushed garlic then arrange on top of the toast.
4. Drizzle the olive oil and vinegar over the bruschetta, season to taste then serve.
A little parsley is also a welcome addition.
