This delicious dish uses spiralised courgettes instead of spaghetti to reduce cooking time and calorie intake. You’ll find it hard to believe you’re not eating pasta, as the warmed courgette noodles fuse beautifully with the parmesan, bacon, pepper and chilli.

parmesan cheese, grated, plus more for garnish |
1. Start off by heating the oil in a frying pan then add the bacon and cook for 5 minutes, once cooked place on a plate lined with kitchen towel
2. Next, if required add a drop more oil to the pan then fry the black pepper, crushed dried chillies and garlic for 30 seconds before adding the courgettes, cook for 2-3 minutes, tossing frequently, until the courgette noodles are warmed and al dente.
3. Sprinkle the parmesan on top and mix. Serve the noodles into a bowl/deep plate and top with pieces of sliced bacon. Garnish with further parmesan or dried chillies as desired.
Switch bacon for mushrooms if preparing the vegetarian equivalent.
