An all time favourite in the comfort food category. Cauliflower cheese is one of those dishes to warm the heart on cold winter day.

cauliflower, cut into florets |

semi-skimmed milk |

plain flour, sieved |

cheddar |

breadcrumbs |

olive oil |
salt, to taste |
1. Preheat an oven to 160°C/180°C fan/gas mark 4. Cover a baking tray with the olive oil and cauliflower florets then cook for 15 minutes.
2. In the meantime, take a large pan and place it over a medium heat, then melt the butter.
3. Once the butter has melted, incrementally add the flour; mixing in constantly until a biscuity paste has formed.
4. Next, begin to add the milk a little at a time, mixing as you go.
5. Once all the milk has been added, and no clumps remain, add the cheese a handful at a time.
6. Place the cauliflower florets in a baking tray with high sides, and cover with the cheese sauce, top with breadcrumbs and finish either in the oven or under the grill until a golden brown crust has formed.
Try adding in herbs and seasonings for extra flavour.
