2l water
250g sugar
1 or 2 pears per person
1 cinnamon stick

Method

  1. Begin by peeling each pear from stem down. Trim off the base of the pear and roll in lemon juice to avoid browning.

  2. Add 2 litres of boiling water to a saucepan and add sugar – stir until fully dissolved then simmer for 2 minutes.

  3. Add pears and the cinnamon stick, cook for approx. 20 minutes turning occasionally to ensure even cooking.

  4. Serve pear warm or cooled with optional toppings listed below.

Chef’s tips

Sweetener (e.g. Zero-cal, Stevia drops) can be used instead of sugar.

Add vanilla bean for alternative taste.

For an Asian twist, add a star anise and 2 slices of lemon.

Serve with yoghurt/ice cream depending on preference.
