This classic breakfast dish, also known as eggy bread, is easy to make and always goes down a treat. Served with fresh berries and icing sugar.
3 | eggs |
100 ml | whole milk |
1 tsp | vanilla extract |
1 tsp | ground cinnamon (optional) |
2 slices | bread |
20 g | butter (or vegetable oil) |
fresh berries, chopped, and icing sugar (optional) |
1. In a bowl, whisk together the eggs, milk, vanilla essence, and cinnamon by hand. Whisk until the mixture is smooth and fully combined.
2. Pour the mixture into a large, shallow dish.
3. Place the bread into the mixture, and leave it to soak for 2-3 minutes. Carefully flip the bread over and again, let it soak for 2-3 minutes.
4. Whilst the bread is soaking, melt the butter in a large frying pan on a medium heat. Alternatively, vegetable oil can be used instead.
5. Carefully remove the bread from the mixture and place it in the frying pan. Fry the bread for 2-3 minutes on each side.
6. Remove the bread from the pan. Add the chopped fresh berries and dust with icing sugar to serve.
Instead of serving it with fresh berries and icing sugar, you could try it with bacon and maple syrup, bananas and honey, ice cream, or anything other toppings you enjoy!
