150g fine oats
150g all-purpose flour
1/2 tsp salt
1/2 tsp sugar
7g fast-acting yeast
300ml milk
200ml water
100g cheddar cheese, grated
4 slices smoked ham
Butter for frying
1. Combine the oats, flour, salt, sugar, and yeast in a mixing bowl.
2. Gradually pour in the milk and the water, whisking the mixture to remove any lumps.
3. Cover the mixture with a tea towel and let it rest in a warm place for about half an hour until the batter is frothy.
4. Melt some butter in a frying pan and ladle in a small amount of the oatcake batter, swirling the pan so that the batter coats the pan evenly.
5. Cook each oatcake for 3-4 minutes on each side or until it is golden brown. Once all the oatcakes are cooked, place a slice of cooked ham and some grated cheese in the middle of each oatcake.
6. Roll the oatcake so that the cheese and ham are inside. Return the oatcakes to the frying pan, and cook for another 2-3 minutes on each side or until the cheese is melted and gooey.
Get creative with your fillings, try mushrooms and avocado for a veggie version.
