Skewered meat

These nutty Nigerian kebabs serve as perfect barbecue treat, and are traditionally served as street food in West Africa.

Ingredients

wooden skewers, soaked in water for 30 minutes 
400g beef steak or chicken, cut into 5cm cubes
For the marinade:
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
½ tbsp white pepper
 ½ tbsp cayenne pepper 
4 tbsps smooth unsweetened peanut butter
8-12 tbsps stock 

Method

  1. Pre heat oven to 230C/450F and line a tray with tin foil.

  2. Mix all the marinade ingredients in a bowl to form a paste – your looking for a consistency that can be brushed onto the meat.

  3. Thread the meat onto the skewers, keeping them tight to one and other.

  4. Brush the meat with the marinade on both sides and leave to marinade for at least 30 minutes (the longer you leave them to marinade the better the flavour)

  5. Place on the baking tray and bake for around 20-30 minutes until fully cooked (if using chicken) or until the steak is cooked to your liking – turn them halfway through cooking.

Chef’s tips

Tofu works well as a vegetarian Alternative!

These are traditionally cooked on a BBQ, but work in the oven or under the grill as well.
