Tabbouleh Inspired Rice

Tabbouleh is a light, fresh Lebanese dish traditionally made with bulgur wheat. This version uses brown rice and is full of nutritious vegetables!

Ingredients

150g brown rice
1/2 cucumber, chopped
2 medium tomatoes, chopped
1/2 red onion, finely chopped
1 large garlic clove, crushed
1 lemon, zest and juice
2 tbsps olive oil
mint and parsley, finely chopped, handful
salt, to taste

Method

  1. Begin by bringing a pan of water to the boil and adding your rice. Use a 2:1 ratio of water to rice. Reduce to a simmer and cook for approx. 15 minutes until soft and tender.
  2. Meanwhile, chop the veg and herbs, then combine with all other ingredients listed above into a large mixing bowl.
  3. When the rice is cooked, drain and rinse thoroughly under a cold tap to cool then leave to stand.
  4. Finally, add the cooled rice and mix everything together! Serve and enjoy chilled or at room temperature.

Chef’s tips

Replace the rice with bulgur wheat or cauliflower rice for a different take on the dish. Add chickpeas to turn the dish into more of a meal.
