These corn fritters are the perfect side dish or starter for a Thai evening.
600g | sweetcorn, drained weight |
2 | eggs, beaten |
2 | spring onions, sliced |
1.5-2l | vegetable oil |
250g | plain flour |
3 | garlic cloves, crushed |
1 tsp | caster sugar |
to taste | salt and pepper |
45g | basil leaves, chopped fine |
1. Blend 1 third of the sweetcorn then removed to a mixing bowl.
2. Sieve the flour into the bowl and add the caster sugar, eggs, garlic and spring onions, and salt and pepper. Mix together then place in the blender and blend. Return to the mixture to the mixing bowl then add the rest of the sweetcorn and the basil and mix.
3. Place a frying pan over medium heat and add the vegetable oil.
4. Using a pair of tablespoons, carefully drop a tablespoons worth of the mixture into pan, flatten into a disky using the back of the spoon. Fry for about 4 minute or until golden brown then using a spatula flip and repeat.
5. Repeat the process for the rest of the mixture.
6. Serve with dips of your own choosing.
Ajat, Hoi Sin and sweet chilli work well as dipping sauces.
