50g unsalted butter
50g plain flour
1 tbsp English mustard
150ml whole milk
150ml Welsh ale
225g cheddar cheese, grated
1 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
4 slices of bread
Fried egg / salad optional
1. Melt the butter in a saucepan over low heat.
2. Add the flour and stir to create a roux. Pour in the milk and ale slowly, whisking continuously to prevent lumps from forming.
3. Turn the heat up to medium-high and keep whisking for 5 minutes or until the mix thickens.
4. Reduce the heat to low and add the grated cheese, English mustard, Worcestershire sauce, salt, and black pepper. Continue
to stir until the cheese has melted and everything is well
combined then remove from the heat.
5. Toast your bread and spoon on the cheese mixture.
6. Place the slices under the grill or in the oven and cook until they are bubbling and golden brown.
7. Serve hot, with fried egg and salad.
You can add a few splashes of tabasco to the cheese sauce for a hit of heat.
