Tzatziki

This version of a classic Greek mezze is a lovely dip that can be served with gigantes plaki, gyros, burgers or kebabs. 

Ingredients

150g Greek yoghurt
1/2 cucumber
2 garlic cloves, crushed
1 tbsp olive oil
1 tsp lemon juice 
1 tsp chopped/dried mint
1 tsp chopped dried dill
salt and pepper, to taste

Method

  1. Peel the cucumber, cut in half lengthways and de-seed using a teaspoon, then coarsely grate.
  2. Put the grated cucumber into a sieve suspended over a bowl, sprinkle with salt and mix through.
  3. Place a bowl on top of the cucumber and allow to drain for approx. 1 hour or until water stops dripping.
  4. Combine all the ingredients and mix thoroughly. The flavours combine better if given time, so ideally leave in a sealed container in a fridge overnight, alternatively serve immediately.

Chef’s tips

Serve with pita bread triangles or bloomer. Use the recipe as a guide to find your perfect flavour combination!
