Kale & Quinoa Stir-Fry

A simple recipe that’s quick and easy to prepare, packed with some great, healthy ingredients.

Ingredients

200g quinoa, cooked
130g kale, washed
black beans, drained
garlic cloves, diced


Method

  1. Drizzle oil into the pan at a medium-high heat and sauté the garlic for 2 minutes or until soft, then add the kale to the pan and allow to wilt, adding salt and pepper to taste.
  2. Then add the black beans and quinoa, mixing well until everything is combined.
  3. Heat a smaller pan to a medium heat and add oil, frying the egg for around 3 minutes or until the whites have set, place egg on top of the stir-fry when serving.

Chef’s tips

If you’re thinking of using this recipe for a packed lunch, try swapping the fried egg out for a hard boiled one to make sure you’re still getting that protein.
