An easy to make family favourite.
2.5kg | potatoes, peeled and roughly chopped |
300ml | milk |
1 tbsp | butter |
3 tbsps | double cream |
salt, to taste |
1. Place the potatoes in a large pan, fill with boiling water. Cook until the potatoes are fully soft, then strain.
2. In a second smaller pan, warm the milk, butter and cream.
3. Using a potato masher or ricer, mash the potato until smooth.
4. Now, incrementally mix in the milk mixture until a smooth creamy consistency has formed, season then serve.
Add a handful of rosemary and thyme to the milk while warming for extra flavour but remember to strain it before adding to the potatoes.
