This condiment is a delightful addition to many dishes and can be kept in the fridge or in a jar.
handful | coriander, finely chopped |
80g | plum tomatoes, finely chopped |
2 | spring onions, finely chopped |
¼ | red onion, finely chopped |
3 | garlic cloves, crushed |
6 tbsps |
chilli sauce |
4 tbsps |
red wine vinegar |
200ml | water |
1 tbsp | olive oil |
salt and pepper, to taste |
1. Combine the coriander, tomatoes, garlic, spring onions and red onion together in a mixing bowl.
2. Mix the chilli sauce, olive oil, water, red wine vinegar, salt and pepper in a measuring jug, then leave to one side.
3. Pour the liquid into the bowl and mix thoroughly, ensuring all ingredients are coated. Leave in the fridge for a couple of hours to help bring the flavours together.
Use less water and more tomatoes if you want a thicker texture.
