Berry Compote

A simple sauce made with fresh or frozen fruit.

A delicious, simple dessert or an accompaniment to a variety of breakfast dishes!

Ingredients

225g strawberries, fresh or frozen
225g cherries, fresh or frozen
45ml orange juice
2 tbsps honey

Method

1. In a medium saucepan, combine your fruit, juice and honey. Bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 5 minutes for fresh fruit or 10 minutes for frozen fruit.

2. Once bubbling, reduce heat slightly and use a wooden spoon (or potato masher) to mash the fruit. Continue simmering on a medium heat for about 10 minutes, stirring often and occasionally mashing fruit to combine. 

3. Remove from heat, taste test, and if not sweet enough, add more honey or sugar.

4. Transfer to a jar or container to cool thoroughly. Store in the fridge and reheat to serve with french toast, waffles, pancakes, porridge, ice cream, and more! The compote should last 10 days. 

Chef’s tips

Simply replace any of the fruit listed above with suitable alternatives, such as raspberries, blackberries, blueberries, peaches, etc. Also, by adding flavours such as lemon zest, cinnamon and/or vanilla extract, you can add some extra complexities. Make it vegan: Use maple syrup or equivalent, instead of honey!
