This spicy warm stew is both tasty and easy to make with just a few ingredients.
450g |
peeled potatoes, diced |

chorizo sausage, diced |

brown onions, diced |

garlic cloves, crushed |

cabbage either, green, |

chicken stock |

picked thyme leaves |

smoked paprika |

olive oil |
salt and pepper, to taste |
1. Take a large pan, add the olive oil, and place over a medium heat.
2. Fry the onions until soft, then add the garlic and cook for a further 2 minutes.
3. Add the chorizo and cook for 5 minutes.
4. Now, add the potatoes and cook for another 5 minutes.
5. Next add to the pot, the stock, paprika and thyme. Cook until the potatoes are soft. Then using a masher, carefully squash to thicken the stew.
6. Now, add the cabbage and cook for 5 minutes, then serve.
A nice roll of bread with butter never goes a miss with this dish.
