The perfect side to roasts meats, this salad also works well as a healthy lunch option.
120g | parsley, finely chopped |
1 | cucumber, chopped |
120g | tomatoes, chopped |
90g | radish, thinly sliced |
50g | spring onion, sliced |
90g | lettuce , roughly chopped |
mint leaves, finely chopped, handful | |
2 | pitta or flat bread, roughly torn or chopped |
5 tbsps | olive oil |
1 | lemon, juiced |
salt, to taste |
1. In a mixing bowl, drizzle oil and a pinch of salt over the pieces of bread, so the most of the surface area is covered in oil.
2. Heat a pan over a medium heat, once hot, add the bread and fry for 3-4 minutes or until browning appears then flip and repeat.
3. Combine bread with all the other ingredients in a large mixing bowl and mix through evenly, then serve.
Adjust the levels of oil, lemon juice and salt to your personal taste.
