Often referred to as the national dish of Egypt, Koshari is a comfort bowl of rice, lentils, pasta and tomato sauce.
3 tbsps | vegetable oil |
500ml | passata |
2 | red onions, diced |
3 | garlic cloves, crushed |
1 tbsp | white wine vinegar |
salt and pepper, to taste |
1 tbsp | black peppercorns |
1 tbsp | cumin seeds |
2 tbsps | coriander seeds |
1 tsp | ground cinnamon |
1 tsp | dried chillies |
1 tsp | ground nutmeg |
1 tsp | smoked paprika |
1 | brown onion, sliced |
200g | green/brown lentils, washed |
1l | vegetable stock |
250g | long grain rice |
100g | macaroni |
1 tbsp | olive oil, optional |
4 | cardamom pods, cracked (optional) |
Add some freshly chopped parsley or coriander to garnish. Some people also like to add chickpeas to this dish for extra protein.
